Production notes

The grapes are picked at optimum ripeness and fermented on the skins for 7 days. The wine is then pressed and rested in oak barrels for 9 months (25% new oak in a combination of American and French oak). The wine is then blended, clarified, filtered and bottled. The wine ages in bottle for 6 months before being released to the market.

Tasting notes

Deep crimson in color, with dark chocolate aromas layered with plum, cranberry and blackcurrant. Flavors of blackberry and spice with a hint of tobacco integrate with toasty oak, culminating in a rich, smooth finish. Food pairing: Pairs well with beef, game, hamburgers, blue cheese and dark chocolate.
