About this winery
Aristide Mau founded the company in 1897. At the beginning of the next century, his son Yvon scoured the vineyards in search of the finest wines. Manual harvesting. Manual, mechanical and optical sorting. Vatting by gravity. Barrels: 12 to 18 months
Tasting notes
Colour: Deep cherry with ruby fringe. On the nose: fine and complex, initially reserved, then opening up with agitation. The depth of black fruit (cooked blackcurrant and blackberry) mingles with grilled red meat and licorice. Smoky notes complete this fine expression of Merlot. On the palate: Clean, supple attack, evolving on a round, balanced round and balanced. The expression combines black plum, coffee and burnt bread with a noble, elegant note of leather. The finish is persistent, with a hint of toast and cocoa. Food & wine pairing: Serve with duck parmentier or veal blanquette.
