About this winery

Aristide Mau founded the company in 1897. At the beginning of the next century, his son Yvon scoured the vineyards in search of the finest wines. Production notes

Soil: Gravelly brown The grapes are destemmed and crushed, then cold macerated for five days to extract maximum aromas. Alcoholic and malolactic fermentation takes place in temperature-controlled vats. The duration of high-temperature vatting and final hot maceration lasts between 18 and 30 days depending on the tank in order to obtain maximum concentration and balance. The wine is aged in oak barrels for 3 to 6 months depending on the vintage and bottled at the estate.

Tasting notes

Powerful nose with aromas of red fruits (morello cherries, blackcurrants, blackberries). Intense color with ruby hues. Full-bodied and ample on the palate. Food and wine pairing: Serve with duck parmentier and veal blanquette.
