Aristide Mau founded the company in 1897. At the beginning of the next century, his son Yvon scoured the vineyards in search of the finest wines. Production notes
For Sauvignon: Harvesting at maturity. Arrival at the winery. Destemming. Crushing. Pellicular maceration. Pneumatic pressing. For Semillon: Harvest at maturity. Destemming. Crushing. Pneumatic pressing, settling (direct pressing without maceration). Aged on fine lees for 4 to 6 months in stainless steel and wood vats.
Tasting notes
Nose: White flowers followed by citrus fruits, oranges and lemons. Palate: Mineral and floral, well-balanced sugar/acidity. Fresh finish. A great classic, combining the aromatic intensity of Sauvignon with the amplitude and length of Semillon. Food pairings: Foie gras, sea bream carpaccio, seafood, guinea fowl with grapes, goat's and ewe's cheeses.
