Production notes
The bunches were harvested and placed in 12 kg cans. They were then partially destemmed by hand and placed in small vats where maceration and fermentation took place. The grapes are vinified with their skins, like a red wine. They are then co-fermented for 15 days at uncontrolled temperature and with no protection against oxidation. After this period, the wine remained in contact with its skins for 3 months, then aged for 9 months in a closed concrete tank. It was then bottled with minimal filtration.
Tasting notes
These two powerful Leyda varieties have produced an expressive wine with citrus, quince and apricot aromas and floral notes such as orange blossom. On the palate, it stands out for its structure and silky texture. Food pairings: Chicken curry and spicy dal, lamb tagine and sushi.
