Production notes

The grapes were harvested by hand in 12-kilo bins. The two varieties are vinified separately. Strict selection, with only ripe, healthy bunches fed into the tank by gravity. After crushing, the grapes undergo pre-fermentation cold maceration for around 6 days at a temperature of between 6°C and 8°C. Next comes spontaneous fermentation using indigenous yeasts, followed by natural malolactic fermentation in French oak barrels. Aged on lees for 8 months without the application of sulfur. The wine is then decanted and bottled unfiltered.

Tasting notes

This wine presents aromas of cocoa, black fruits, licorice and violets, with discreet acidity and a medium-bodied body. Food pairing: Tajine, lamb couscous or braised meat.
