Production notes
Soil(s) : Sand and limestone Fermentation in small, temperature-controlled stainless steel vats for at least 15 days. Aged in stainless steel vats for 4 months, then 2 months in bottle.
Tasting notes
Appearance: Pale yellow with greenish highlights, brilliant and limpid. Nose: Expressive and fresh, revealing aromas of juicy pear, green apple, citrus (lemon, grapefruit) and white flowers (hawthorn, honeysuckle), with a subtle herbaceous touch (mint, fennel). Palate: Lively, crisp attack, with fine mineral tension. The wine is dry, structured yet elegant, with refreshing acidity supporting lemony, floral flavors. A fine salinity on the finish evokes the sea breezes typical of the Tuscan Maremma. Persistent, clean finish, with a pleasant bitterness of fresh almond in retro-olfaction. Food pairing: Seafood, fish, pasta and risotto, fresh and soft cheeses.
