Production notes

After gentle pressing, 40% of the clarified must ferments in 300-liter new Allier oak barrels. The wine is aged for 8 to 9 months in barrel is stirred regularly to give it fatness and complexity. To preserve the character of the Sauvignon grape, 60% of the harvest is vinified and aged in stainless steel vats with particular care.

Tasting notes

This wine, with its aromas of ripe fruit, is very round and slightly vanilla-tinged, with an astonishing fullness on the palate. This complex wine will become even more refined with age. A combination of finesse and delicacy that makes this a rare wine. Food pairing: This wine is a perfect match for the most refined dishes, such as lobster or crayfish. With a few years' ageing, it will go perfectly with pan-fried foie gras.
