Production notes
Soil(s) : Flinty clay Hand-harvested in 10kg crates, our grapes are then slowly pressed. Our juices ferment for the first time in stainless steel vats and are aged for 8 months on fine lees before their second fermentation in the bottle in the purest tradition of the Champagne method. The excellent ripeness of our grapes means we don't need to add liqueur d'expédition, enabling us to offer you an Extra-Brut cuvée. Aging on laths lasts a minimum of 24 months.
Tasting notes
The long ageing process produces very fine, delicate bubbles. The nose, complex and very typical of the Chenin grape variety, delivers notes of flowers and white-fleshed fruit. On the palate, a fresh attack is followed by a powerful, taut, saline finish. Food & wine pairing: Ideal with seafood (seafood platter, sliced scallops, oysters) and desserts, especially chocolate desserts.
