Production notes

Symphony is fermented with champagne yeast. A first fermentation by brewing two basic sakes: Clear sake fermented with Japanese sake yeast and Cloudy sake fermented with Japanese sake and champagne yeast. After mixing these two basic sakes in the tank, secondary fermentation begins. Usually, sugar and yeast are added before this sparkling wine-making process, but we never add sugar and syrup. The yeast carries out the alcoholic fermentation using only rice sugar, producing natural, soft bubbles. Rice polish level: 70%.

Tasting notes

Color: Delicate bubbles Nose: Complex fruity and slightly toasted aroma. Palate: Moderate sweetness with pleasant acidity, short finish with a mellow, silky aftertaste.
