Production notes

A process similar to that used to make beer, with the fermentation of rice. Junmai means pure rice, which means that it is the only ingredient used with water and yeast in the production of this sake. Uses 100% of Kyoto's famous "Fushimi" water. Rice polishing: greater than or equal to 50%. Slow fermentation at a low temperature of 10°C. The name 'Kizakura' refers to a rare flower, the yellow cherry blossom. It blooms later than 'Yoshino cherry', the classic pink cherry blossom.

Tasting notes

Colour: Colourless On the nose: Floral, fresh strawberry and white peach aromas. On the palate: A delicate blend of rock salt and silk. Food and wine pairing: Pairs well with white fish dishes, red tuna and vegetable tempura.
