Production notes

Kizakura Ginjo Namachozo is a Japanese sake of the Ginjo Nama Chozo type, which means that it is not pasteurized after bottling, unlike most sakes, which are pasteurized twice (after pressing and before bottling). Rice polishing: 55% Fermentation: Specific yeasts used in Ginjo production to develop fruity and floral aromas.

Tasting notes

Aromas: Fruity, floral, with notes of melon, green apple, and sometimes banana. Taste: Light, refreshing, slightly sweet, with nice acidity. Alcohol: About 14.5%. Food and sake pairings: Best served cold, as an aperitif or with light dishes such as sashimi or seafood.
