Production notes
Destemming, whole berry fermentation, light pumping over 3 times a day at a temperature of 85 degrees fahreneheit to reduce extraction of tannins from the pips. Pressing after 4 days of maceration. 100% malolactic fermentation in barrels. Aged 18 months in French oak barrels (32% new wood) and Burgundy export barrels.
Tasting notes
Color: Attractive, almost black color with purplish highlights. Nose: superb aromas of blackberry tart, with hints of smoke. Palate: Rich, intense aromas of ripe black fruit. Food pairing: Pairs well with aromatic herbs and pan-fried meat dishes such as rosemary lamb chops with roasted fennel.
