Production notes

Fermentation in 20-ton stainless steel vats with light pumping-over six times a day. Maceration on skins less than 6 days to maintain supple tannin structure. Malolactic fermentation in oak barrels after primary fermentation. Aged for 18 months in American and Hungarian oak cooperages.

Tasting notes

The savory notes of Cabernet Sauvignon overlay the dark fruit and spice character of Petite Sirah. The bouquet of cocoa powder, caramel and aniseed works in harmony with this wine's signature black cherry. Bright and concentrated on the palate, with a firm, appetizing finish. Food pairing: Serve with Santa Maria-style grilled prime rib, seasoned with a simple rub of garlic, salt and pepper, accompanied by toasted French bread, fresh salsa and stewed pinquito beans, for a classic California coastal feast.
