Production notes

Hand-harvested, gently de-stemmed, mechanically sorted (optically if necessary). All grapes are moved by gravity. The berries are de-stemmed mechanically and the seeds are added to better control the tannic structure. Fermentation takes place in stainless steel, using a system of air pulsation and manual pigeage to gently manage the cap of marc. All juice is separated from the skins, with no addition of press wine.

Tasting notes

Raspberry and clove aromas are followed by cherry flavors with hints of tobacco and oak. Food pairing: Pork liver pâté, grilled salmon, roast chicken, duck or mushroom risotto.
