Production notes
The grapes are destemmed and partially crushed. The vats are "délestées", meaning that the juice is removed from the container and put back either at the bottom, sheltered from the air, or at the top, in search of oxygenation as required. This method makes it possible to gently extract the noblest tannins with deeper substance and to emphasise a complex aromatic palette. Vatting lasts 35 days in temperature-controlled concrete vats. The Grenache is aged exclusively in concrete vats for 9 months. The other grape varieties are aged in barrels for a further 9 months.
Tasting notes
This is a very expressive, powerful wine, with a fragrance of red and black berries, spices and tobacco. It is ripe on the palate, with opulent berry and plum fruit. There are also aromas of spices, nuts and fine herbs, with powerful, supple tannins. This is a mineral wine with a vigorous finish. Food pairing: Perfect with fatty meat dishes.
