About this winery

A region between mountain and sea, 65 hectares of vines on a terroir rich in biological, geological and climatic diversity. Production notes

Soil: Mediterranean red, puddingstone on sandstone (mixture of rounded pebbles and limestone) The Cuvée Prestige Ollieux Romanis comes from selected plots aged between 40 and 100 years old. Indigenous yeasts are used for Syrah and Mourvèdre, traditional yeasts for the other grape varieties. Vatting for 12 to 18 days. Carignans vinified using carbonic maceration. The Cuvée Prestige Rouge is aged 50% between 6 and 12 months in barrels used for 1 to 5 wines and 50% in stainless steel vats, with the wine stored at 15°C.

Tasting notes

Color: Deep red with purple highlights. Nose: Intense and complex, blending aromas of ripe black fruits (blackberry, blackcurrant), sweet spices (clove, cinnamon), garrigue, with hints of leather and licorice. Palate: Full-bodied, silky and structured. The tannins are mellow but present, giving the wine good length. Notes of candied fruit and cocoa are present, with a slightly woody and spicy finish. Food and wine pairings: Venison in grand veneur sauce, cassoulet, and roast pork with shallots.
