Production notes

The grapes are harvested at optimum ripeness, usually by hand, to preserve their integrity. The bunches are carefully sorted to eliminate any grapes of inferior quality. The grapes are then placed in temperature-controlled stainless steel vats, where alcoholic fermentation takes place. This process transforms sugars into alcohol thanks to the action of natural yeasts. During fermentation, maceration takes place to extract tannins, color and aromas from the grape skins. The wine is then aged in oak barrels for 12 to 18 months, of which around 30% is new wood.

Tasting notes

Appearance: A deep garnet-red color with purple highlights. Nose: A captivating bouquet of ripe black fruits such as blackcurrant, blackberry and plum, with hints of red fruits such as cherry. Hints of cedar, tobacco and spices such as clove and black pepper add complexity. Palate: Full-bodied and rich on the palate, with velvety tannins offering a smooth, elegant texture. Ripe black fruit flavors continue, accompanied by notes of dark chocolate, roasted coffee and a touch of vanilla. A long, satisfying finish, with fruit and spice notes lingering on the palate. Well-integrated tannins provide a solid structure, promising excellent aging potential. Food pairing: Ideal with hearty dishes such as roast lamb with rosemary, beef bourguignon or mature cheeses like Gouda or Parmesan.
