Production notes

The grapes are hand-sorted before de-stemming, and then optically sorted to select only the very best, which are then placed in vats for 15 to 18 days for cold pre-fermentation maceration and 5 to 6 days for alcoholic fermentation. Alternating punch-downs pumping over and punching down of the cap to encourage gentle extraction. Aged on lees for 15 months in new barrels (33%) and one- to two-wine barrels.

Tasting notes

Lovely red fruit notes: redcurrant and cherry. Luscious and juicy on the palate, with a silky finish. Food pairing: Grilled meats or meats in sauce.
