About this winery
The Mignon family comes from a line of winegrowers native from Mesnil-le-Huttier, a little hamlet of Festigny, a village located a few kilometres away from Epernay, the capital city of champagne. The Vallée de la Marne vineyard runs alongside Côte des Blancs, well-known for the quality of its Chardonnay. Champagne Charles Mignon has vines at the heart of the Great Growth village of Chouilly. Production notes
Made from the first pressings of certified organic grapes from the Marne Valley “Chavot, Hautvillers, Port en Binson, Vincelles”, the Montagne de Reims “Bisseuil, Ville dommange” and the Côte des blancs “Grauves”. 12% reserve wine. Vinified in temperature-controlled stainless steel vats. Slow alcoholic fermentation at low temperature. Complete malolactic fermentation. Moderate dosage of 6g/L to preserve freshness, fruitiness and flavor balance. Aged in our cellars at a constant 12°c for 24 to 36 months.
Tasting notes
A rich, intense and complex bouquet. Delicate pastry, apple and floral aromas. The blend of three grape varieties reveals flavors of white fruit, stone fruit and subtle pastry notes. Food & wine pairings: A Champagne that lends itself perfectly to food and Champagne pairings with, for example, poultry fillet stuffed with foie gras, roast quail, lobster ravioli with fine herbs.
