Production notes

Soil(s): Limestone and clay-limestone Low-pressure direct pneumatic pressing (presses with vertical drains guarantee high juice quality), clarification, fermentation temperature control, racking and ageing on fine lees for 4 months. Aged in vats for 5 months before bottling.

Tasting notes

Appearance: Pale golden yellow, brilliant and limpid. Nose: Very expressive, with great maturity and well-balanced freshness. Complex, elegant, powerful and rich. Ripe citrus aromas (lemon, lime and grapefruit) blend subtly with mineral notes, which are also very pronounced. Palate: The attack is rich and ripe, with yellow fruit dominating. Then freshness reveals itself and a beautiful harmony on the palate. The structure is powerful, balanced and full-bodied. Its limestone origins are revealed on the finish with finesse and density. Food pairing: Frogs' legs, smoked salmon, fine grilled fish, shellfish, seafood and poultry.
