Production notes

The grapes for crémants are harvested early to ensure the freshness and elegance of the base wine. It is then pressed in whole bunches to limit crushing, and only the juice obtained at low pressure is kept. The first alcoholic fermentation takes place in temperature-controlled vats. The best basic wines, suitable for this cuvée extra brut, are then blended and bottled with yeast and tirage liqueur. The second fermentation, which ensures the formation of foam, then takes place slowly in the cellars. The wines then rest on their lees for at least 18 months, during which they gain in volume and complexity. The bottles are then stirred and disgorged using the traditional method. No disgorging liqueur is added to preserve the dry, lively character of the base wine, characteristic of “zero dosage” wines.

Tasting notes

Colour: Pale gold with fine, regular bubbles. Nose: Elegant and complex. It offers an array of aromas, starting with floral notes of hawthorn and acacia, underlined by a fresh hint of verbena. Delicate pear completes the floral and fruity palette. Palate: Fine bubbles sparkle on the palate. The body is finely chiselled. The fresh, floral notes of the nose develop into a very long finish. a very long finish. Food & wine pairing: Perfect with Asian cuisine such as sushi or egg rolls, as well as raw or grilled fish.
