Production notes

Manual harvest obligatory. Traditional method (as used in Champagne). Strict control of harvest date and alcohol levels to ensure freshness and cleanliness. 12 months minimum latte period.

Tasting notes

Inviting nose of white flowers, slightly fruity. The palate is delicate and well-defined, with notes of green apple, elderflower and peach. peach. A light, elegant style, ideal as an aperitif, to capture the nuance and delicacy of the flavors - delicious, thirst-quenching bubbles. Food pairings: Cheddar cheese puffs, roasted green asparagus, mushroom arancini, Thermidor lobster and salmon filet with cream sauce.
