About this winery

Our Burgundy village of Bailly is the cradle of AOC Crémant de Bourgogne. Since 1972, in an underground stone quarry offering unique natural conditions, we have been producing sparkling and still wines from another world. Production notes

Harvested by hand. Grapes are placed in 45-kilogram crates to preserve their integrity. Alcoholic and malolactic fermentations, blending by cuvée and preparation for bottling, which begins after December 1st. Patient aging of bottles on laths for an average of 16 months, in the constant natural coolness and muffled light of the underground limestone quarry.

Tasting notes

Nose: Dense red fruit, white peach, pear, sliced apple, white flowers and fresh almonds. Palate: Flavors of red fruits, buttered toast and spices. The bubbles are fine and persistent, offering a full, refreshing mouthfeel. The finish is lively and balanced. Food pairing: Two-salmon canapés, tuna and avocado tartar bites, strawberry tart for dessert.
