About this winery

Our Burgundy village of Bailly is the cradle of AOC Crémant de Bourgogne. Since 1972, in an underground stone quarry offering unique natural conditions, we have been producing sparkling and still wines from another world. Production notes

Harvested by hand. Pneumatic presses. Base juice made from 150 kilograms of grapes per 100 liters of juice, 75% from the head of the cuvée of cuvée and 25% of pruning. Alcoholic and malolactic fermentations, blending by cuvée and preparation for bottling starting after December 1st. Bottles are aged on laths for an average of 16 months, in the constant natural coolness and muffled light of the underground limestone quarry.

Tasting notes

This Rosé is made from Pinot Noir and Gamay grapes. The first variety grape variety provides the “vinous” character and the second the aromas of red fruit. A wine for pleasure par excellence, it freshness and finesse, with a light mousse and airy palate. and an airy mouthfeel. Food pairings: appetizers and aperitifs, fish dishes, white meats and fruity desserts.
