Production notes
7-day fermentation at 24.5°C, with morning and evening pump-overs, followed by a slow malolactic fermentation. Aged for 20 months in French oak, 1/3 new, 1/3 one-year-old and 1/3 two-year-old.
Tasting notes
Intense red color, with aromas of black fruit, chocolate and lightly toasted, balsamic notes. Tasty on the palate, with volume and fleshiness, wrapped in a clean freshness that leaves a pleasant vinous sensation and finishes with soft, polished tannins. Food & wine pairing: Perfect with red meat, charcuterie, spicy dishes, pasta and mature cheeses.
