Production notes
Hand-harvested with selection of bunches in the vineyard. Gentle destemming and fermentation in 500-liter oak barrels. Malolactic fermentation in new 500-liter French oak barrels. The wine then stays in the same barrel and ages on its lees for 22 months, without racking, but with light stirring from time to time. Bottled unfiltered, the wine rests for 10 months before going on sale.
Tasting notes
A benchmark in aromatic precision and tannic intensity, this wine is surprisingly dense yet soft. Chewy, deliciously sweet tannins, tertiary notes of coffee and dried beans on the finish. A testament to great winemaking rather than a particular origin. Food & wine pairing: Perfect with red meat, charcuterie, spicy dishes, pasta and mature cheeses.
