Production notes

Made from sustainably grown Pinot Noir grapes. The juice is fermented and rested for a period in stainless steel. Before bottling, to remove the alcohol from the wine, a gentle vacuum distillation is used, to preserve the grapes' natural aromas. This method extracts the alcohol under extremely low pressure and temperature (around 30°C). No flavor is lost when the wine is treated by the dealcoholization process.

Tasting notes

Nose: Fresh red fruit aromas of cherry, raspberry and occasional subtle hints of strawberry. Palate: Light and fresh, with a pleasant acidity that adds liveliness without being too intrusive. The fruity flavors of cherry and raspberry are confirmed, and a slight touch of vanilla or spice may appear on the finish. The finish is moderate and fruity, with a sensation of lightness, without too much persistence. Food pairing: White meats, charcuterie boards, fish and vegetarian dishes.
