Aristide Mau founded the company in 1897. At the beginning of the next century, his son Yvon scoured the vineyards in search of the finest wines. Production notes
Soil(s) : Clay-limestone Parcel selection. Traditional Bordeaux-style vinification in temperature-controlled stainless-steel vats. Cold pre-fermentation maceration (10°) and hot post-fermentation maceration. 1 to 2 pump-overs per day, 25-day vatting period.
Tasting notes
Appearance: Deep raspberry with purple highlights. Nose: Expressive, fruity, with a blend of raspberry, strawberry and blueberry, combined with roasted and vanilla notes. Palate: After a very fruity, round and well-balanced attack, the palate evolves towards a tangy, fleshy texture, with flavors of roasted almonds and cocoa. Food pairing: Serve with grilled meats, beef, game and hard cheeses.
