Production notes
The grapes are harvested by hand. The grapes are then carefully transported and rigorously sorted in the cellar, ensuring that only ripe, healthy berries are kept. Cold pre-fermentation maceration is carried out. 70% of the juice is vinified and aged in concrete eggs. The remaining 30% is matured in 500L French oak barrels. The wine is aged on lees for 10 months, adding texture and aromatic complexity.
Tasting notes
This Chardonnay is intense and fruity, yet elegant with aromas of green apple, pear, lychee and subtle lactic notes of softly whipped cream and praline. The palate reveals intensely fruity notes of pear and ripe white peach. It's fresh, vibrant and has a juicy minerality that balances nicely with the creamy texture due to contact with the lees. Very well integrated and mineral with persistent aromas. Food pairings: Lamb curry, stuffed poultry, white-fleshed fish, asparagus and mushrooms.
