Production notes

Whole bunch pneumatic pressing with juice selection. Light cold settling. Fermentation with indigenous yeasts. Aged for 36 months on lees, in underground vats, with regular stirring of the lees.

Tasting notes

This Muscadet comes from the oldest vines planted on gneiss. Three years of ageing on lees make this a great wine for laying down and gastronomy, combining freshness and length on the palate with smoky notes of citrus fruit, fennel and aniseed. Food and wine pairings: Lobster, fish in white butter sauce, scallops, shoulder of lamb confit.
