Production notes

Fermentation in stainless steel tanks, with maximum temperatures reaching 92°F. Malolactic fermentation took place partly in new American oak barrels and partly in stainless steel barrels. Aged for 12 months in 60-gallon American oak barrels, 18% of which were new.

Tasting notes

On the nose: Ripe fruit aromas of black cherry and redcurrant are accented by notes of toasted pastry, hazelnut and vanilla from our authentic barrel aging program. Palate: Juicy, generous red fruit flavors infuse the palate, while soft-textured tannins lead to a long, rewarding finish. Food pairings: Bison burgers with blue cheese, roast leg of lamb with honey and root vegetables and pasta with tomato and braised beef.
