Production notes
The soils are mainly lacustrine silty clay. Gently de-stemmed, then whole-berry pressed in the absence of oxygen to preserve the wine's natural freshness. All grapes are gently moved by gravity. All juices are pressed to separate the finest part of the grape. Fermentation at cool temperatures of 15-17°C in stainless steel tanks to preserve the delicacy and freshness of the fruit.
