About this winery

A region between mountain and sea, 65 hectares of vines on a terroir rich in biological, geological and climatic diversity. Château Ollieux Romanis is located in the heart of the Pinada massif in the Corbières. In Roman times, our territory was known for its drinking water springs. Production notes

Vinified in accordance with traditional methods, the grapes are first fully destemmed, then gently macerated for 8 to 12 days. The Syrah undergoes a cold pre-fermentation maceration to enhance its aromatic expression. Fermentation, carried out with indigenous yeasts, faithfully reflects the character of the terroir. The wine is aged for 15 months in temperature-controlled stainless steel tanks at 15°C, preserving its finesse and freshness. No fining, no artifices — just the wine, in its purest expression.

Tasting notes

To the eye, an intense purple hue. The nose captivates with its complexity: cardamom, black pepper, and ripe plum. On the palate, a dense core of fruit — black cherry, raspberry, and blueberry — subtly enhanced by notes of bay leaf and minerality. The texture is supple and silky, carried through to a warm, lingering finish marked by spice and dark fruit. A deep, harmonious wine, both generous and elegant. Best enjoyed with grilled duck breast drizzled with blackberry sauce, herb-crusted roast pork with Provençal herbs, or a lentil stew seasoned with smoked paprika. It also pairs beautifully with aged Comté cheese or a rustic wild mushroom tart.
