Production notes

Direct pneumatic pressing at low pressure (presses with vertical drains: a guarantee of the high quality of the juice), clarification, control of fermentation temperatures, racking and ageing on fine lees for 4 months. Aged in vats for 5 months before bottling.

Tasting notes

The colour is golden, brilliant and limpid. The nose is mellow, very ripe and full, with notes of fresh citrus fruit, preserved lemon, orange peel, kiwi fruit and sweet spices. The palate is a ripe explosion of citrus fruit and pineapple. The balance is impressive. The finish lingers for a long time. Serve between 10°C and 12°C A thirst-quenching wine that gives the dish all its flavours. Fresh, natural flavours: scallop carpaccio, langoustine tartar, crab in jelly, rock fish. The flavours of the land: white meat with cream, pan-fried foie gras, notes of truffle and pan-fried chanterelles, goat's cheese with chutney. The flavours of travel and mixed cuisine: lamb tagine with apricots, frogs' legs with satay.
