Our Burgundy village of Bailly is the cradle of AOC Crémant de Bourgogne. Since 1972, in an underground stone quarry offering unique natural conditions, we have been producing sparkling and still wines from another world. Production notes
After pressing the grapes and static settling, the wine is vinified in stainless steel vats at a constant temperature. Following a rigorous tasting in the vat, malolactic fermentation may be stopped, depending on the vintage, to bring out the freshness and personality of the Sauvignon Blanc.
Tasting notes
Light gold colour. Complex nose of citrus and exotic fruit, with a pronounced herbal note. Powerful attack on the palate, combined with an explosion of tangy white fruit and a blackcurrant bud finish. Wine and food pairing : Perfect with oysters and a warm goat's cheese salad with citrus vinaigrette.
