Production notes

Soil(s): Upper Jurassic limestone After grape pressing and static settling, the wine is vinified in stainless steel tanks at constant temperature. Following rigorous tank tasting, malolactic fermentation may be stopped, depending on the vintage, to bring out the full suppleness of Côtes d'Auxerre blanc.

Tasting notes

Appearance: Intense pale gold. Nose: clean and floral, with a hint of almond. Palate: supple, unctuous attack, evolving on a fresh structure. Delicious aromas of white berries. Good persistence. Food pairing: Shellfish, fish, poultry, cheeses (fresh goat's cheese and soft cheeses).
