Our Burgundy village of Bailly is the cradle of AOC Crémant de Bourgogne. Production notes
After pressing the grapes and static settling, the wine is vinified in stainless steel vats at a constant temperature. Following a rigorous tasting in the vat, malolactic fermentation may be stopped, depending on the vintage, to bring out the minerality of Chitry to the full.
Tasting notes
Pale gold colour. Strong nose of lime blossom and hawthorn. Clean, mineral attack on the palate, developing into a structure marked by acidity. Beautiful structure expressing an aromatic character both iodised and citrus, suggesting grapefruit. Wine and food pairing : This Bourgogne Chitry Blanc is best served with a carpaccio of marinated salmon and a cream of dill, or with meunière-style fish.
