Production notes

Automatic optical sorting of destemmed grapes, followed by pre-fermentation cold maceration for 4 days. Fermentation, by separate varieties, in stainless steel vats at a controlled temperature of between 24 and 26ºC. All the vinification processes are carried out by gravity, to better preserve the quality of the grapes.
